The chicken is then deep-fried, pounded for a softer texture, and topped with spicy Cabai Hijau. Next, the partner in crime known as the 'Iga Penyet' fried beef spare ribs served with fiery Sambal Terasi, pestled together on a mortar for a burst of flavour. Iga Penyet is one of the popular dishes from the East Javanese culture, which is now available in their buffet to entice your savouring journey.
