Healthy & Delicious U.S. Potatoes Recipes by Chef Jason Manson

My whole family loves to eat U.S. Potatoes, be it crispy U.S. Potatoes chips, mashed U.S. Potatoes, oven baked U.S. Potatoes or any other type of cooking method. We love dishes made with U.S. Potatoes because they are filling, delicious and brings a lot of healthy benefits.
In fact, U.S. Potatoes have zero fat, zero sodium and zero cholesterol, so it's a healthier choice for the whole family old and young. Many people thought Potatoes are fattening but the real facts is One medium-sized potato has 110 calories only.

One medium size U.S. Potato provides about 30% of your daily value, 27 milligrams of Vitamin C. Vitamin C that may help support the body’s immune system that helps boost our immune system naturally to help us fight against illnesses.
A medium sized potato contains 26 grams of carbohydrates, which is a key source of energy for muscles. Potatoes are more energy-packed than any other popular vegetable and give our body long-lasting energy.

U.S. Potatoes are rich in Vitamin B6 with one medium potato providing 10% of the recommended daily value. Vitamin B6 is important for proper cell function. They help with metabolism, creating blood cells, and keeping cells healthy.

Potatoes have 3 grams of plant-based protein per serving. Protein is the building block for growth and a key component of muscles, ligaments, and connective tissues.
Furthermore, it is high in potassium. One medium size skin on a potato contains 620 milligrams of potassium or 15% DV more than a medium-size banana. Potassium helps regulate fluids and mineral balance in and out of cells, maintain normal blood pressure, vital for transmitting nerve impulses or signals, and in helping muscles contract.

Everyone loves Chocolate Chip Cookie, from kids to adult. I have baked a few round of Chocolate Chip Cookie during the COVID-19 pandemic lock down period. They taste amazingly delicious! So I wanted to share my recipe with you today.
[Recipe] Amazing Chocolate Chip Cookie (Make Around 120 medium size cookies)

Ingredients
230gram salted butter (Room Temperature)
170gram white (granulated) sugar
170gram light brown sugar packed
1 tsp pure vanilla extract
2 large eggs 
(Room Temperature)
375 gram all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp salt
50gram chocolate chips

There's nothing like a batch of homemade cornflakes cookies to lift our mood at this MCO. Staying at home can be fun too, by making Kellogg’s Corn Flakes cookies with my kids at our home sweet home.
My family love cornflakes because it is healthy, very low in Saturated Fat and Cholesterol. It is also a good source of Vitamin A, Thiamin, Riboflavin, Niacin, Vitamin B6, Folate, Vitamin B12 and Iron. In fact, cornflakes can be a quick breakfast cereal as well as an ingredients for many other food.

Amazing Chocolate Cake Recipe

My younger girl turns 7 and she requested a chocolate cake. Since we were staying at home, I decided to bake one for her. There are many different chocolate cakes and I have made an amazing chocolate cake that is moist and coated with buttercream. Scroll down to see the recipe.

Amazing Chocolate Cake Recipe

Ingredients
Chocolate Cake

1 and 3/4 cups (220g) all-purpose flour (spoon & leveled)
3/4 cup (65g) unsweetened natural cocoa powder
1 and 3/4 cups (350g) granulated sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons espresso powder (optional)
1/2 cup (120ml) vegetable oil (or canola oil or melted coconut oil)
2 large eggs, at room temperature*
2 teaspoons pure vanilla extract
1 cup (240ml) buttermilk
1 cup (240ml) freshly brewed strong hot coffee (regular or decaf)

Lemon Loaf Cake Recipe (Inspired by Starbucks)

Anyone here tried Starbucks’ Lemon Loaf before? I love it as it is Full of lemon flavor, moist, dense, and rich.
Since we are asked to stay at home, I thought why not we try to bake this lemon loaf at home? So here's the recipe I used to bake the Lemon Loaf Cake Recipe:

Ingredients

The Lemon Loaf Cake
1/2 cup butter (113 gram), room temperature
1 cup sugar (200 gram)
zest of 2 lemons
1 tsp vanilla extract
2 eggs, room temperature
1 1/2 cup all purpose flour (195 gram)
1.5 tsp baking powder
0.5 tsp salt
1/2 cup buttermilk (120 gram)
2 tbsp lemon juice (about 0.5 lemon)

The Lemon Syrup
1/4 cup icing sugar (50 gram)
2 tbsp lemon juice

The Lemon Frosting
1 cup icing sugar (120 gram)
2 tbsp lemon juice
1 tbsp milk

Basque Burnt Cheesecake Recipe (as Good as Tokyo Restaurant)

Basque burnt cheesecake is so popular here in Malaysia especially after Tokyo Restaurant introduced it. Cheese lovers would surely love this soft, creamy and rich flavour cheesecake.
I used to bake quite a lot before married. However, I have stopped baking for awhile after becoming a mother. Since the Movement Control Order happening in Malaysia, I have picked up my old hobby and baked my first ever Basque burnt cheesecake for my family.
Surprisingly it is really easy and fast to make. We have chosen Anchor brand for their premium cheese and dairy products. The ingredients was so easy to get too, as we could just order from Bake with Yen.

Diners were lucky enough to get seats for the one-day sold-out event enjoyed the thoughtfully crafted 6-course fine-dining menu at the great atmosphere in Ruyi & Lyn, Bangsar Shopping Center.

As promised, here's the U.S Potato “Power Up” Recipes for The Fit & Athletic by Chef Naem. We love all the creations, they are nutritious and delicious. You should try them out too.

CHICKEN TOMYAM U.S HASH BROWN

Ingredients

· 6 U.S Hash Brown
· 1 pack tom yam paste
· 2 chicken breasts (poached)
· 2 tomatoes (diced)
· 2 kafir lime leaves (sliced)
· 2 coriander leaves (sliced)
· 1 lemon grass (diced)
· Salt / pepper

Method of preparation

1. Poach the chicken ( Cut, dice & put chicken into simmering water seasoned with some salt and ginger until cooked)
2. Air-fry the U.S hash brown at 100C for 15 minutes till golden brown.
3. Spread the tom yam paste on the hash brown.
4. Mix in a bowl the chicken, tomatoes, kaffir lime leaves, coriander, lemongrass, salt & pepper.
5. Season well.
6. Place the chicken on top hash brown.
7. Garnish with coriander
